Vacuum cooking in a sealed pouch
The octopus is cooked directly in its sealed PA/PE pouch. Nothing escapes: neither the product’s natural moisture nor its flavours. This is what produces consistently tender, juicy, never rubbery meat, with a high yield.
The cooking schedule is not universal: it is defined for each production batch according to piece size, pouch weight, maximum thickness, initial product temperature, cooking medium temperature and circulation, target core temperature and desired texture. The selected time/temperature combination is validated industrially and microbiologically.
Kitchen preparation
STEP 1
Defrost
12 to 24 hours in the refrigerator, sealed pouch, before use. A defrosted product must never be refrozen.
STEP 2
Portion
The product is already cooked and cleaned. Slice cold for a carpaccio, cut into medallions, or use whole depending on the size chosen.
STEP 3
Serve
Quick reheat on a plancha, grill or bain-marie. No long cooking is needed: the meat is already tender.
Frequently asked questions from buyers
Is the product fresh or frozen?
Frozen. The octopus is vacuum-cooked then quickly frozen, which fixes the texture achieved during cooking. Shelf life is 24 months at −18°C or below: you can stock without DLC pressure and defrost on demand.
Is the octopus ready to serve?
Yes. It is cleaned and fully cooked through. After refrigerator defrosting, it can be sliced cold or reheated for a few minutes on the plancha. No cleaning or long cooking is needed in the kitchen.
Is there added water or salt?
No. The product is 100% octopus, with no added water, no added salt, no preservatives or additives. Cooking in the sealed pouch prevents any intake of external water: you pay for octopus, not brine.
Which tentacle size should I choose?
The tentacle size depends on the parent octopus. 50/70 g and 70/100 g suit tapas, skewers and bites; 100/150 g for individual portions. 150/200 g and 200/300 g are the standard for plated main courses. 300/400 g, from octopus over 3.5 kg, are intended for showpiece presentations and medallion cutting.
Where does the octopus come from and how is it traced?
Trap-caught in FAO zone 34, Central-East Atlantic, origin Mauritania. Each box carries the batch number, catch date, production date and fishing zone; health documents accompany the shipment.
